Buying Beltie Beef
We sell our meat as vacuum-packaged, freezer beef. Quantities are typically a quarter carcass, a half carcass, and a whole carcass. We call our beef quarters "splits." After the meat is cut and packaged our butcher splits in half the cuts from both a front quarter and a hind quarter yielding two quarters, each with an equal number of meat cut types.
Availability. Meat is generally available in the late summer, fall, and early winter. Order before processing and you can choose how your meat is cut and packaged. For example: Boneless or bone in, soup bones or more ground beef, size of ground beef packages, size of roasts, steak thickness and number per package, and your choice of organ meats (liver, tongue, oxtail, and heart).
Pricing. Prices are based on the hanging weight of the carcass before it is cut and trimmed. They are determined by retail supermarket prices at the time the animal was sent for processing. A typical quarter from a two-year-old steer will have a hanging weight of between 100 and 150 pounds and will yield the following percentages of typical cuts:
19% steaks
17% roasts (chuck, arm, sirloin tip)
9% round cuts (eye roast, top round steaks, bottom round)
10% misc. (short ribs, organ meat, brisket, etc.)
45% lean ground beef (percentage will be lower if soup bones and/or stew meat is ordered)
These percentages can be used to calculate the actual retail cost of your meat purchase using current supermarket cut meat prices.

Delivery. We offer free delivery to destinations within a 50-mile radius of R & B Farm. Delivery charges are applied to distances beyond 50 miles.
Live Sales of Breeding Stock
All the cattle born at R & B Farm have registered Belted Galloway sires and dams with show stock backgrounds. We do not show any Belties, but we do pay attention to conformation and marking in making our breeding decisions. Our herd bull and brood cows are selected on the basis of the following characteristics:
-- gentle temperament
-- calving ease
-- moderate adult weight
-- breeding efficiency
Cull animals are NOT offered as live sales.
Depending on availability, we sell a full range of animals including: cow-calf pairs, weaned calves, heifers, steers, and bulls. Bulls below two years of age are not tested for reproductive viability.
Live animals may be picked up at R & B Farm or may be delivered to the location of your choice. Delivery charges apply.
